The easiest and also most delicious of my cookie recipes is this one. Even if you don’t care for graham crackers, this combination of flavors is addictive and like a special secret candy that you wonder why you don’t make these the year around. Then you eat four of them, and know why you don’t make them the year around!
Sometimes called 7-layer bars (no idea what the 7th layer is to save my life right now!), or magic-bars (no magic involved- these are pretty darn straightforward), or Hello Dolly’s. I like the latter name, as I like the song from the 1960’s musical. I imagine Carol Channing (the original star in the Broadway musical) singing along in her raspy voice, eating a bar, and then to her delight, the name continues on forever… Sigh. Anyhoo, that is why I call it Hello Dollies, and not magic 7 or really 6 layer bars! Here’s the simplest and most delicious yummo bar cookie you will try:
12 Days of Christmas Cookies, Day 5: Hello Dollies!
- 3/4 stick of butter melted
- 1 1/2 cup of graham crackers crushed fine
- 1 cup of shredded coconut
- ½ cup chopped/crushed pecans (optional)
- 1 cup chocolate chips, bits, or chunks
- 1 can of sweetened condensed milk
Line an 8X8 pan with parchment. Melt the stick of butter, and mix with the graham crackers. Press this mixture into the bottom of the pan until it is firm and even. Sprinkle the pecans and coconut over the top. Sprinkle the chocolate chips. Pour the sweetened milk over the top, coating everything.
Bake at 350° for 30 minutes. Cool and remove lifting the parchment. Now it should be easy to cut into squares and then triangles with a large knife.
By lining the pan with parchment, you can lift them out after they cool and cut them into bars much easier.
