Do you see how it has been loved? So much so that the paper is stuck together permanently. It doesn’t matter. I have remade this so many times as it is written and also, reworked it to be healthier. Either way it is a winner. Here is the original from an old website, which is now re-created with the same name, FoodGeeks.com….they have been around for a while now. This is just one of many recipes that I have from this site, from a contributor, Carrie Sendykar. Thank you Carrie. If you are out there somewhere, you are a genius. This is a recipe that has been requested immediately after I make it, more times than I can count!
A hearty and delicious soup that I have traditionally made every New Year's Day. Recipe from Carrie Sendykar, on FoodGeeks.com (2002).
- 2/3 cup butter
- 2/3 cup flour
- 6 cups milk
- salt and pepper to taste
- 4 Large potatoes, baked
- 1 cup sour cream
- 5 oz. grated cheddar cheese
- 4 chopped green onions
- 1/2 cup bacon cooked and crumbled
Melt butter in a large pot. Using a whisk, add the flour until smooth.
Add the milk gradually, whisking continually. Add salt and pepper.
Simmer until hot but NOT rapidly bubbling.
Cut the potatoes in half and scoop out the pulp.Chop half the peels and toss the rest. Mash up the potatoes until soft.
Add the potatoes to the milk, and stir. Add the sour cream and cheese until melted. Simmer lightly, but don't let it boil-this breaks the dairy.
Garnish with onions and bacon.
This is easily made a bit healthier, by using skim milk for the milk and lowfat sour cream and cheese. It will still be delicious, just not as decadently rich! I have also used full fat greek yogurt for the sour cream, which works quite well, without changing the taste too much. But for special occasions...just leave it as is. You will love it!
