Quesadillas: The leftover-cure. I always have leftovers. I sometimes have leftovers for lunch, and then for dinner, and then dinner again. THAT is how many leftovers I have!
The reason WHY I have so many leftovers is not poor planning, it is just that I like to make sure we always have more than enough food made, and so does my husband. He literally panics if there is not enough food, and I, therefore, overcompensate to avoid any panic! The good news is that we love leftovers!
Sometimes you can just enjoy the same meal twice, or make it into a new meal entirely like the “cook once, eat twice” idea that is a fabulous time-saver, and help for budgeting. But I can’t ever make the second meal, because we’ve always just eaten it all without having the chance to make it into another recipe! We just “cook once, and eat twice…as much.” We are almost too efficient in this one area of our lives. Sigh.
If I do happen to get leftovers (and not have eaten my face full of food) how easy and fun are quesadillas? Quesadillas both sound and look like a real meal when I have almost nothing in my house to eat! They are great for breakfast with eggs or lunch with peanut butter and banana…
But my most recent lovely was for dinner: Barbecue Chicken Slider Quesadillas.
Holy.Yum. Like a pulled barbecue chicken sandwich… but with tortillas…and pickled jalapenos…and coleslaw…and gooey cheese. Love.
Try this. You will love it! Warning: It requires maybe 2 napkins or one large paper towel while eating…a bib isn’t out of the question here! Maybe a change of clothes?…Messy, but yummy!
