Blue Cheese Asparagus BitesI have been making these for years and I just keep going back to this recipe because people just love it. If you love asparagus and cheese separately, you will love this great combo of the two. I chose to include it this week as the Sunday Supper bloggers are all creating “fancy” appetizer recipes (and you can read them all at the end of this post!) but honestly, this may look fancy, but it is not hard to make at all!

The best part is that they freeze beautifully, so if you ever just want to pull out an appetizer and heat it up for the last minute- this is your guy! I got the original recipe from a St. James cookbook, that my friend’s mom gave me circa 2002, and this is from Laura Hill. I made a couple of changes, namely using low-fat cream cheese, low fat mayo and less butter. But all in all, it stayed quite the same, since that turned out so well! Here it is:

From a short list of ingredients, this makes a nice appetizer to bring to parties, or to make ahead and have on-hand.


  • 1 loaf sliced white bread (yes, white!)
  • 1 can (15oz) asparagus spears or pieces
  • 8 oz. crumbled blue cheese
  • 8 oz. low-fat cream cheese, room temp.
  • 1 Tbsp. mayo
  • 1 egg white beaten
  • 1 stick butter, melted


  1. Preheat the oven to 350*
  2. Line a baking sheet with parchment.
  3. Cut the crusts of the bread and roll each slice under a rolling pin, until flat. Set aside.
  4. In a large bowl, mix the blue cheese, cream cheese, mayo and egg with a fork until soft.
  5. Spread a thin layer of the cheese on a slice of bread. Place an asparagus spear on one end. Roll it up, and cut into thirds.
  6. Roll in butter, and place on baking sheet.
  7. Continue this way, until all the bread is used.
  8. Bake for 20 minutes or until lightly browned.


If you aren't going to bake right away, follow the directions for all except baking. Freeze flat on a baking sheet and then transfer to a ziplock bag. To bake, just remove and bake for 20 minutes at 350*.
