“Skinny” Buffalo Chicken Dippers? I know. I don’t know about “Skinny” but healthier for sure! I just get sick of saying everything is heathier. Plus, I got this recipe way back when…I did the South Beach Diet- ugh. My husband loved these. Actually needed these. When I wouldn’t let him eat the wings with all the skin and deep fried and all that goes with delicious Buffalo wings…this appeased the craving and felt good on his gut- and mine! Hence, “Skinny” Buffalo Chicken Dippers.

I love Buffalo flavors anyway, and have made lots of yummy apps like, these Buffalo Bites done 3 ways (they are wontons)…

But I love these little dippers that I’m sharing today because they are SO EASY, one little package of deliciousness, and are great as leftovers on a salad- there I said it. They go with salad.

So when you are surrounded by wings, dips, and all things fried…bring this to your next tailgate or football party with a salad, and you will have plenty to eat!

Now here’s the thing: If you are from anywhere near Buffalo, New York, you dip in Blue Cheese. It’s not even a question. You either dip in blue cheese dip, or nothing. There is no alternative.

Having moved to Massachusetts in my 20’s I was shocked and dismayed at the prospect of dipping a perfectly good wing into…Ranch. Nope.

But alas, twenty years later, I am nicer, and I cater to my guest’s wants and desires…so Ranch and Blue Cheese both have a seat at my table if I am serving wings. These Buffalo Chicken Dippers are the wings at my table this year, so I will of course have both dipping options. Here are the homemade versions:

Now….on to the chicken and how to make this deliciousness.

Skinny Buffalo Chicken Dippers

Cut the chicken up into bite-sized pieces that you can fit on a toothpick. Season.

Saute the chicken until cooked through, about 5-10 minutes and remove to a separate bowl.

Melt the butter, add the hot sauce, and stir until combined. Add the chicken back to the skillet andcook until bubbly and all the chicken is coated. Remove from the heat.

Cut the celery thin, into pieces like this:

Skewer a celery piece, and then a chicken piece. Continue until the plate is filled. Alternatively you can make a mound of chicken and serve the toothpicks and celery on the side, as that is amazingly delish too.

For your dipping sauce, choose either or both the Blue Cheese Dip or the Ranch.  Serve on the side.

Now all your guest have to do  is grab a toothpick, dip and put it on the plate- no mess. So easy. You’re welcome. Like I mentioned, this was a (affiliate link) South Beach Diet recipe that I adapted and don’t really know which exact cookbook it’s from, since I just make it from memory for the past 10 years, but if you want to see the original you can go to the library and check it out or see it on Amazon!

Skinny Buffalo Chicken Dippers #SundaySupper

This is one of my favorite recipes that I have adapted to enjoy the taste of Buffalo wings, guilt-free!

Ingredients

  • 4 boned, and skinned chicken breasts (or 2 whole breasts, not split yet)
  • 2 Tbsp canola oil for frying
  • 1/2 tsp. garlic powder
  • 1/2 tsp. salt
  • 1/2 tsp. ground pepper
  • 1/3 cup soft butter substitute (I used Smart Balance)
  • 1/2 cup Red Hot sauce (not the buffalo sauce- I used Frank's)
  • Optional for serving
  • Celery sticks, carrot sticks
  • Blue Cheese Dressing
  • Ranch Dressing

Instructions

  1. In a large, non-stick frying pan, heat the oil over medium heat.
  2. Cut the chicken up into bite-sized pieces and season all of it by sprinkling the garlic powder, salt and pepper all over it. Add to the oil in two batches, so not to overcrowd the pan. You want to brown the chicken, not steam it.
  3. Saute the chicken until cooked through, about 5-10 minutes and remove to a separate bowl. Repeat until all the chicken is cooked.
  4. To the empty pan, add the butter and melt it.
  5. Add the hot sauce, and stir until combined. Add the chicken back to the skillet and cook until bubbly and all the chicken is coated with the sauce. Remove from the heat.
  6. Serve in a mound with celery sticks and carrots on the side, along with your chosen dipping sauce
  7. or
  8. Serve on a tootpick, by cutting the celery into slices, skewering a celery slice, and then a chicken piece and place on a platter. Serve with the sauces on the side.

Homemade Healthier Ranch Dip

You may have seen my Homemade Healthier Blue Cheese Dip on Wednesday…so to be fair to those who dip their wings and things into ranch…(I have no idea WHY?!), this one’s for you!

Obviously, you can tell, I am in the Blue Cheese Camp for dipping…but I love this homemade Ranch Dip as a salad dressing too- or as a dip for veggies, so I knew, no matter what dipping-side you may lean, that you’d love this recipe like I do!

It’s similar to the Blue Cheese Dip, in that I use greek yogurt to substitute for some of the fat from sour cream or mayonnaise. But I also add in buttermilk- which if you don’t buy it and are worried about the leftovers, buttermilk makes AMAZING pancakes and muffins as a substitute for milk.

Homemade Healthier Ranch Dip

1/2 cup low-fat or full fat plain greek yogurt
3 Tbsp. buttermilk (I use the brand above, but you can use any cultured buttermilk)
1/2 tsp. worcestershire sauce
1 tsp. lemon juice
1 tsp. dried dill
1 tsp. fresh minced garlic (but in a pinch powder will do)
1 tsp. onion powder
1/4 tsp. ground black pepper
1/4 tsp. salt
1 Tbsp. fresh chopped (fine) parsley (or 1/2 Tbsp dried parsley)

In a large bowl, whisk together the yogurt, buttermilk, worcestershire, and lemon juice until smooth. Add the rest of the ingredients and mix with a rubber spatula until combined. Thin with more buttermilk until it’s the consistency you like. Adjust seasoning with salt/pepper. Refrigerate until ready to serve. Enjoy!

With the impending big football game…you know the one where my Patriots are playing the Eagles?! Yep, that one….anywhoo, with the football game coming, otherwise known as the SUPER BOWL {WhootHoot!!}, we will be having all kinds of goodies to eat, drink and be merry with.

But I have been eating so healthily for a month now- Why would I undo all that good, with one crazy day of snacks and drinks…no thanks. So, I am making some adaptations of my favorite foods, and snacks so I have enough to eat myself, and my like-minded guests will too.

Healthy Blue Cheese Dip or Dressing

Here’s my healthier take on a typical Blue Cheese Dressing that I serve with Buffalo Wings:

Homemade Healthier Blue Cheese Dip

1/2 cup low-fat (2%) or full fat, plain greek yogurt
2 TBSP. olive oil mayonnaise
juice of 1/2 a lemon
1 tsp. worcestershire sauce
1/4 tsp. salt
1/8 tsp. pepper
1/2 cup (small) crumbled blue cheese

Using a whisk, mix all the ingredients except the blue cheese until smooth. Add the blue cheese and stir with a spatula or spoon. Scoop into a bowl and serve with your favorite wings, veggies, or anything else that requires a little blue cheese dip! I love it with these Healthy Buffalo Chicken Kabobs (I am making some Buffalo Chicken Dippers (bites) this weekend!).
