Chocolate Chip Banana Muffins

20140826_173450Coming off of a vacation filled with yummy snacks, breakfast sandwiches, and hand-made ice cream cones an everyday occurrence, I felt that I needed to have some good and fun but somewhat healthy breakfast or snack options at the ready.

My standby recipe for muffins is one that I adapted from another blogger, who I just love her recipes.  In this one, I made some changes but generally stick to her plan.  Here is my version of a recipe that can be adapted to suit any taste really.  My taste this week is bananas and chocolate:

Chocolate Chip Banana Muffins


Prep Time: 15 minutes

Cook Time: 28 minutes

Yield: 24 muffins


  • Dry:
  • 3 cups whole wheat flour
  • 1/2 cup all purpose flour
  • 4 tsp. baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp kosher salt
  • 1/2 cup brown sugar
  • 1/4 cup sugar
  • Wet:
  • 11/4 cup oil
  • 1/4 cup applesauce
  • 1 cup almond milk
  • 1/2 cup vanilla yogurt
  • 2 egg whites
  • 1 tsp vanilla
  • Mix ins:
  • 2 very ripe and smashed bananas
  • 1/2 cup chocolate chips
  • 1/2 cup


Mix the dry in a large bowl with a wisk, incorporating it all together without lumps.

In a separate bowl, mix the wet ingredients and then add in the mix-ins.

Add the wet mixture into the dry and with a rubber spatula mix/fold all together, not overmixing, but just making it all come together.

Spoon into greased (sprayed with oil spray) cupcake tins, and bake for 22-28 minutes in a 350* oven.
