Granola is so easy and if you need gluten free breakfast or snack, you can adjust the recipe so easily. My mom was making granola before granola was cool. All my friends knew when she made it, as the house fills with a wonderful smell. One large rimmed sheet pan and paying attention to cooking it slowly. I use a combo of a few good recipes and use whatever I have on hand for the nuts. The more you make it, you know how you like it, such as if you want it sweeter, add more maple or honey.
4 cups rolled oats
1 cup wheat germ/wheat flakes/bran
2 Tbsp flax or chia seeds (this can be ground too)
1 cup combination of nuts, chopped (cashew, almond, sunflower seeds)
1 tsp salt
1 tsp cinnamon
1/2 cup oil
1/3 cup water
1/4 real maple syrup
1 tsp vanilla
Mix the liquids and mix into the dry ingredients. Spread in an even layer on a rimmed baking sheet, and bake at 300* for 1 hour. You can stir gently half way through. It is done, when the oats turn a dark golden brown.
I love this plain in a ziplock bag for a snack, or with you favorite milk- almond is my favorite, or with a yummy yogurt and fruit.
I sometimes add raisins the last 10 minutes but don’t ad from the start or they get rock hard!
