This my friends, is the P.D.P.

AKA: Pre-Diet Pie.

AKA: WHYBAML Pie. {Where have you been all my life} Pie?!

I was handed this recipe after a Thanksgiving of enjoying a slice of this amazing pie, and the maker of said pie, told me how “easy” it was to make.  By the way, the maker, is also a professional pastry chef.  Yes.  Well.

I politely took the recipe, and indeed, it read like it might be easy, but a pastry chef telling me the recipe for a yummy pie is “easy” is just not going to sell it for me.  She makes pies for a living!  As in every day!

So, needless to say, I put the recipe away for two years, and then, in honor of my impending Whole 30…I decided to make a Pre-Diet-Pie. That just makes so much sense to me.

And can I tell you…?  This pie was E-A-S-Y. And probably the best blueberry pie I have ever had. I am so dumb! Why have I not made this pie before now (WHINMTPBN)!?  Or, simply: WTF?! Now I will have to wait atleast 30 days…unless I make it again, super quick.  And I could…

Easiest, No-Bake Blueberry Pie

Easiest, No-Bake Blueberry Pie

This recipe was given to me by the talented Annie G., on a print-out titled, "Aunt Molly's Unbaked Blueberry Pie." I wrote my own directions.


  • one 9" baked pie crust (any)
  • 12ounces fresh blueberries (I used a large bag of frozen- not thawed)
  • 3/4 cup water
  • 2Tbsp. flour
  • 1/2 cup sugar
  • 1/8 tsp. salt


Put the blueberries in a saucepan. Mix the flour and water in a separate small bowl, then add to the pan. Add the sugar and salt. Cook on high until it comes to a boil and then lower to a low- medium heat, simmering for 7-10 minutes. Stir frequently until thickened and the berries are a darker color. Some berries will pop. Remove from the heat and let sit for a few minutes.

Pour the mixture into the cooled, baked pie shell and level with a spatula. Let sit for several hours until it is set (at room temperature). After slicing, store in the refrigerator.

Serve with whipped cream or vanilla ice-cream.


This is an amazing pie. I have never had a fruit pie that didn't "leak" or make the crust soggy.

Seriously. I couldn’t even clean it this well! This is how nicely this pie cuts to serve.

It was easy to serve pretty slices when the juices weren’t running all over the place- Make this.  You can use store-bought crust to make it even easier, and I know you will thank me when you do!
