Easy Pesto Chicken Spinach Salad

I am not sure it is even fair of me to post this as a recipe- It is so EASY! And it was lunch 3 days in a row! I love salads for lunch, and this one hits all the spots: tangy feta, crunchy spinach, filling pasta, ready-made pesto, and already cooked chicken, with the brightness of tomatoes to top it all off!

Sure, homemade pesto is easy enough to make. Yes, chicken is fast to cook…but when you have chicken leftovers, and pasta too…well, salad doesn’t get much easier. Especially with Trader Joes’s Pesto- You could of course use any brand, but this is my go-to guy. Yum.

So here’s the full on “recipe”:

Easy Pesto Chicken Spinach Salad

A hearty and rustic salad, this makes a perfect lunch or dinner!


    Rough Measurements
  • 1 cup cooked, chopped chicken
  • 2 cups baby spinach
  • 1/2 cups thawed frozen peas
  • 1/2 cup chopped tomatoes
  • 2 ounces crumbled feta cheese
  • 3 ounces of prepared pesto (About 3 Heaping Tbsps.)
  • Salt and Pepper to Taste


Mix all in a bowl and serve!


See? So. Simple.
