Healthier Strawberry Bread

I love, love, love strawberry recipes.  I know you are sick of seeing them probably, but I have one more not-to-miss recipe for your summer baking. I made this for ME. I like to bake only because I like to eat what I make.  Does that make sense? Thank goodness I am not a crazy baker, because I would be eating all the time – the crazy yumminess of sugary goodies after each meal of the day!

This is not a “healthy” recipe.  But it is healthier than the original recipe , which inspired me to redo it a bit.  I have loved-up my print-out of the recipe, so much so, that it is almost translucent, with notes written all over it, as I have made it for so many years.   I make this every year at strawberry season…and every year my husband asks me, “why?” Haha! He thinks I bake for him! That is funny! I bake for me… It just so happens that he likes most things I make! Silly family, Strawberry Bread is for Barrie…though now my boys love this as much as I do.

Healthier Strawberry Bread

Cook Time: 1 hour

Total Time: 1 hour, 15 minutes

Yield: 2 loaves

This is a nice recipe to bake one - take one. It makes 2 loaves and you will want to keep both, both it turns out so nicely that I often give one away!

Ingredients

    Dry
  • 3 cups All-purpose flour
  • 1 teaspoon kosher salt
  • 1 tsp. baking soda
  • 1 tsp. ground cinnamon
  • 1 cup sugar
  • Wet
  • 1/4 cup oil
  • 1/4 cup greek yogurt
  • 3/4 cup applesauce
  • 3 eggs, plus 1 egg-white beaten together
  • 2 cups sliced strawberries (fresh or frozen & thawed)

Instructions

Spray 2, 9X5X3 loaf pans, and set aside.

In a medium bowl, mix the dry ingredients with a whisk.

In a separate, large bowl, mix the wet and then add to the dry.

Mix thoroughly until combined.

Divide batter, spooning half of the mixture into each pan.

Bake at 350* for 60 minutes or until a knife inserted in center, comes out clean.

Cool in pans flat for 2 minutes, and then on their sides for 2 minutes and then remove from the pan and cool on wire rack. Slice and enjoy!
