Healthy Buffalo Chicken Kabobs| Hardly A GoddessThis is a great and versatile recipe that is healthy, low-carb, and easy to make for when you want Buffalo Chicken Wings, but not all the calories or fat. This fills that void and satisfies any craving for an indulgence you might have. Plus, if you are like me, and your favorite dinner means that you: eat all the appetizers and drink all the wine… Well, then. You’ve come to the right place!

I am sharing, along with my fellow Sunday Supper Bloggers, a TON of finger-foods to have for your next meal. Yes, meal. Who needs a party?!

While I call these kabobs, you may call them skewers. But I hate that word. No offense if ‘skewer’ is your given-name…but ‘kabob’ as a word is just way more fun and somehow acceptable to me! And these, my friends, are fun food…so “kabob” it is!

Healthy Buffalo Chicken Kabobs #SundaySupper

Ingredients

  • 2 packages of chicken breasts, or 4 separated breasts.
  • 1/3 cup of hot sauce (like RedHot)*
  • 3 Tbsp. butter
  • wooden skewers
  • For serving:
  • blue cheese or ranch dressing

Instructions

Heat your grill or grill-pan to medium-hot heat.

Soak your wooden skewers in water for 15 minutes, while the grill heats.

Make the sauce

In a small pan, heat the hot sauce and butter together until thoroughly mixed. Set aside.

Slice the chicken lengthwise into strips (you can buy tenderloins for this, but this is just as easy).

Place in a flat pan and cover with half the sauce. Reserve the other half to brush on the chicken after cooking.

Slide the chicken pieces on the skewer and put on the grill. Turn once, and cook until totally done.

Remove to a platter and brush on the remaining sauce.

Enjoy with your favorite blue cheese or ranch salad dressings as a dip.

Notes

*You can use 1/2 cup of pre-made Buffalo Chicken Sauce, but I prefer to make my own if I have time.

    These kabobs look so moist and tender. I LOVE buffalo sauce, especially with blue cheese dressing – YUM! I really like that you used chicken breasts instead of tenderloin – you get way more for your money.👍👍
