I have literally made this Healthy Crockpot Pulled Beef Rice Bowl THREE times over the past three weeks! We are all about this easy and delicious, and inexpensive dinner! I have been serving it over rice, riced-cauliflower, sauteed kale or spinach…the gravy…ooo. So good. The leftovers…even better. You will want to make this, and STAT if you

a) are busy and looking for an easy meal
b) want an inexpensive meal to feed your family or
c) are trying to eat healthily and want something delicious and a change from “just chicken”.

Healthy Crockpot Pulled Beef Rice Bowl

1-2 lb. steak (I use London Broil or Bottom Round- whatever is on sale!)
1 onion, sliced
1 green pepper, sliced (or for this 3rd time, I used 1 cup of frozen, sliced mixed peppers)
1/2 cup chicken broth
1 tsp. salt
1 tsp. garlic powder
1/2 tsp. paprika
1/2 tsp. ground pepper
1/4 tsp. chili powder

Spray your CrockPot. Cut the steak in half and put in the bottom of the pot. Add the rest of the ingredients on top.Healthy Crockpot Pulled Beef Rice Bowl

Cover. Cook on low for 6-8 hours or high for 4 hours (though I have never done that!) When it’s done, shred right in the pot using two forks. Stir with the juices. {This is the beef, and it’s done!}

Prepare your rice according to directions on the bag/box for however many servings.

If you want additional veggies, and I always do, saute some and serve alongside in your bowl. I use kale, broccoli, or zucchini or whatever leftover veggies I have left in the fridge, sauteed in a pan to heat up.

To put it all together, scoop about 1/2 cup of rice in your bowl. Add your veggies on one side, and a scoop of the steak with the sauce on the other. Garnish and serve!

I have to say, this makes the best leftovers. I eat it in an egg omelet- sounds weird, but it is SO good- the gravy is amazing, so once the steak is gone, save your gravy for serving over some vegetables.
