Oh, the glorious summer!
Are you enjoying the weather as much as my Northern-self is?
The beach, the pools, the flip-flops, and just being outside for so much of the days is just so nice! I think people around me too, are just nicer! This weather has changed our eating so much too- not all for the better, but noticeably different. We definitely have been grilling a lot more which has been reflected in my summer-menus.
This week’s menu is a bit different, as I am sort of off the grill, but I also have the pleasure of making an ice-cream cake again for my daughter’s birthday, as requested by all the kids and their grandmother too!
Here’s my Celebration Menu for July 12th-19th
Monday: Meatless Monday!! Cuban Beans & Rice
Tuesday: Spaghetti & Meatballs, Salad
Thursday: Crockpot BBQ pulled chicken sliders- with “Mutha” Sauce
Friday: Birthday request day!!! Ice-Cream Sandwich Cake!
Saturday: Family BBQ
Sunday: Out to Eat
I feel like I should remind you that I menu plan, for the sole reason that it makes my life so much easier. The days that don’t stay on plan, I just forward to another day or freeze if I have done it ahead. The beginning of my week is super flexible and the end is super hectic this week and most weeks, so I will do a lot of cooking ahead this week, and just knowing that, reminds me to get-er-done!
