Menu Plan Monday: Week 2 Whole30

week 2, whole 30So I have made it through 1 week of Whole 30.  Truly, this was a super hard week to start…a conference at work, stress in general, a 1st communion, fire-pit complete with s’mores and then Mother’s Day celebrations, meant lots of opportunities for sugar, and wine for celebrating!

I forget how hard it is when you don’t want to draw attention to the fact that you are on an eating plan (or diet) but your eating is so different than your social setting!   I don’t want to make you feel bad about what YOU are eating…I just want to eat what I planned to…With all of my strange things thrown into our schedule this week, it was still so nice to just enjoy what was going on without worrying about the food…but then, I am all about the food usually.  Changing a frame of reference for the time-being is hard.  It has already made me aware of how much I was getting used to finishing the uneaten food from my kid’s plates, or enjoying too much of all the foods in general, good or bad for me. It has been interesting

It has also been a lot of cooking. I am not so used to that either.   I cook a lot already, but this is even more. I think this week will be more about making some meals that I am already used to making and just adjusting them to the Whole30 acceptability, while also trying to make-ahead on one day for the rest of the week to make it easier.

So here is my “plan”:

1 Omelet with veggies & taco meat, strawberries, coffee Homemade sausage, fried egg, monkey salad (banana, and cashews) Fried eggs, sweet potato hash with Aidell’s Chicken & Apple Sausage, mixed fresh fruit Bacon, egg, avocado, and tomato salad, leftover roasted potatoes Fried eggs, sweet potato hash with Aidell’s Chicken & Apple Sausage, mixed fresh fruit Omelet with mushrooms, onions, spinach, and tomatoes, bacon, grapefruit Bacon, fried eggs, monkey salad
2 Tuna-salad on lettuce, broccoli,avocado, cherry tomatoes Turkey rolled up with avocado and fajita veggies, grapegruit Chicken salad on a salad, apple with sun butter Leftover cabbage and beef, carrots and celery with sun butter Tuna salad with chopped veggies on lettuce leaves, with avocado Chicken salad on a salad, apple with sun butter Aidell’s Chicken & Apple Sausage, broccoli, apple with sun butter
3 chicken with spinach & veggies (red pepper, sugar snap peas), apple with sun butter Veggie Salad with grilled chicken dressing, and handful of cashews Skillet beef and cabbage with roasted potatoes Chicken salsa lettuce tacos with avocado and fajita veggies, fruit Aidell’s Chicken & Apple Sausage, broccoli, apple with cashew butter Butternut Squash soup, salad with chicken on top fruit Steak with chimichurri sauce, baked potato with ghee and chives, green beans

I say “plan” because I haven’t gone shopping yet- I am way off schedule, which is good, but throwing me off this meal plan kind of…I may make a totally different meal plan as the week goes on…but then I will let you know this of course in my Whole 30 Log that I have been keeping.

I have started a Whole30 Pinterest Board too, to try to get some fast ideas to work from when I have nothing in my brain, and dinner is about to happen…or lunch.  Or breakfast. Ugh. This is more thought than I want to do right now! Check it out:

    I’ve heard great things about Whole30. Change can be tough and the first few weeks are probably the toughest. You’ve got this and remember to be kind to yourself in the process 🙂
