Monday Menu Plan: Inspired by Pinterest

Day of the Dad


Do you ever feel glad it’s a Monday? Back to your regular schedule and routine? I kind of am glad to have today be a regular day.  This weekend was hard work having fun! I had a party to host on Friday, a party to host on Saturday, and Day of the Dad on Sunday.  This fun is exhausting! Ridiculous. But they are cute, so there you have it. The stuff you will do to make cute happy is sometimes out of bounds!

And now, I have to get my laundry done and house clean and meal-plan for the week… but do you think I did this? Yes! I did! (Well part of it!) The good thing about having parties, is that your house gets cleaned…like all of it cleaned.  Not just the first floor. I cleaned the whole thing this time, since I was having a lot of kids sleep over on Saturday. This was such a big bonus AND reward for doing it in the first place! AND you also have food in the house left over usually from these parties…Which means I am in good shape with the week ahead on that front too.

However- I have thoroughly lost my mojo now.  And when that happens, I can’t love Pinterest any more than I already do, but I try.  I am going to try to actually make what I have pinned this week for dinners. (I know!) Shocking! People do that?! Here goes this week’s plan from pins from my boards, and notes on making them fit into my week:

Menu week of June 21 – 28

Healthy, adaptable for kids: Balsamic Glazed Steak Rolls , roasted potatoes
Easy 30min meal: Honey Garlic Pork Chops , rice, veggies
Prep ahead!: Stuffed Buffalo Chicken, salad, veggie sticks for the kids, corn
Easy on the grill: Salmon Foil Packs, jasmine rice
A  make-ahead soup night: Sausage Tortellini Soup, rolls, salad
A work day: CrockPot PotRoast, steamed green beans

I don’t know about you, but this menu looks pretty awesome! It has a little of everything to round out a week of meals I won’t get bored by and because it has a few simpler meals to make, it fits in nicely with work-days.  All of these are pretty healthy or adaptable to make them the way we eat lately, and I think they are sort-of kid friendly, or can be made that way (by deconstructing) a bit if I need to.  Inspired by Pinterest yet again {sigh}.
