12 Days of Christmas Cookies, Day 4: No-Bake Crispy Chocolate Balls

This is similar recipe to one that I have posted before, but last night I watched a re-run of Saturday Night Live’s Schwetty Balls Skit, and had to laugh:  These are My Balls.  I had to include them in my Christmas line-up.

Truly the underdog of the bunch, date ball recipes are all over the place right now.  Mine are a little different because I add Rice Krispies at the end, to add the best texture to this underrated cookie.

Now, I know these cookies don’t look like a Christmas delight! In fact I know exactly what they look like, as when I piled them up for a picture, I then promptly decided they needed to be in little paper cups to keep them from looking like a dogpile.  Oy.  But that is a GOOD thing! It keeps the littles away, and more for you!  I literally stockpile these in my freezer all year around and take a few for a breakfast on the run, or a mid-day healthy chocolate fix.  There is zero guilt in these little babies, and what’s better, is that they taste so much better than they look- The unexpected surprise and joy as you bite into one, and instantly want another.  I urge you to give it a try, as I know you will be happy with the outcome, and then guilt free enjoyment is yours.

No-Bake Crispy Chocolate Balls


  • 1 cup whole, pitted dates (about 25)
  • 1/2 cup dark raisins
  • 2-3 Tbsp natural peanut butter
  • 2 Tbsp cocoa powder
  • 1 tsp. honey
  • 1 cup Rice Krispies


In your food processor, fitted with chopping blade, chop all the ingredients EXCEPT the Rice Krispies. Pulse a bit to get it going, then process fully for about 30 seconds. The mixture will seem dry but that is normal.

When everything has a texture of pebbles it is done. Add the Krispies and process for another few seconds until combined and all is incorporated.

Using your hands, form the mixture into tablespoon sized balls. Place in a container lined with waxed paper, and eat or freeze for later.


I only have a 3 cup processor (please read this Santa!) so I have to do this in two batches, which is time consuming, but easily done.

If you have a peanut allergy or aversion, you can sub any type of nut butter or sunbutter with the same results.


While you make them, the mixture will be crumbly.  Here is the mixture before you add the Krispies and then after (the right pic).

Just so you know, the honest truth is that while I was making these, I asked MoonDog to try one, and he grabbed four more.  They go fast, so make the full recipe or double it if you are making lots of Christmas cookie boxes.
