Pancakes: My Meal Plan Staple

Those of you who have kids that have eaten at my house know this! I can feed lots and lots of hungry kids with pancakes, and even better, when these are chocolate chip pancakes!

Tonight I am just feeding my family, but my kids never complain about this dinner, and I make BLT’s for my husband and me, which is always a treat.

Homemade Pancakes

Yield: 8

This recipe is for 8 pancakes. I usually double it, or triple it depending on the size of my crowd! Leftover pancakes can be frozen and reheated in the microwave too! Recipe from Better Homes & Gardens, The New Cookbook.


  • 1 cup all purpose flour (or sub up to 1/2 cup of whole wheat)
  • 1 Tbsp. sugar
  • 2 tsp. baking powder
  • 1/4 tsp. salt
  • WET
  • 1 beaten egg
  • 1 cup milk (any)
  • 2 Tbsp. cooking oil (or melted butter)


Measure out the dry ingredients, and whisk them until combined completely.

In a separate bowl, Mix the wet together, and then add this mixture to the dry ingredients.

Stir until just combined and not lumpy.

Pour 1/4 cup of the batter onto a hot, greased skillet. Cook over medium heat for about 2 minutes, or until bubbles start to form in the middle of the batter, and the edges look a bit dry.

Flip, and cook 2 more minutes on the other side.

Remove and serve with your favorite syrup.


*Add ins: I add chocolate chips to these on a regular basis. **You can substitute cashew or allmond milk easily here, and use egg replacer too, to make these vegan. ***Make ahead: I will assemble a batch of the dry ingredients and keep them in a jar or ziplock, so I always have the mix on-hand- then I just add the wet when it's time to make the pancakes.

I also make the bacon in the oven- which is a huge time saver and mess saver, and makes a lot of bacon which stays flat!
