Rice & Kale Salad


Don’t turn away! It is not as healthy tasting as it looks! I personally think it looks awesome, and it is, but green-food averse people, stick around, because, this was just eaten up in record time by – two thumbs- this gal!

Doesn’t it look so pretty? It is easy and fast to make:

Rice Salad
1 1/2 cups cooked rice
1 cup chopped raw kale
1 cup chopped carrots
1/2 cup chopped celery
1/2 cup craisins
1/3 cup Red vinaigrette

Mix all, add salt & pepper to taste. Super fast and yummy.

My assembled salad from the picture included arugula, this rice salad, avocado cubes, and a broken up veggie burger. Wholly, yum. Gone, but not forgotten. I am already thinking about my lunch to pack for work on Monday and it’s 10: 00am. Man, I am getting old…
