St. Paddy Brownies and a Love Note

My little love bug came home from school and dropped her backpack and fled out the door to a friends house. Atleast that is what my husband told me as he warned me that when I’d come home from work, I would find how the four kids had destroyed the house and left their things in a hurry.

I did come home to a crock pot of cabbage and corned beef, a house destroyed, and idea for brownies and this little one tucked away in a school folder:

That is love. After a note like that I want to do something nicefor them, even if they are filthy animals! After cleaning up I decided to make these mint brownies for dessert, because 1) they are green and 2) they are mint and finally 3) they are dessert, much needed after my kids do not much like cabbage or corned beef!

I adapted it from Betty Crocker:

Ingredients and Directions

Any brownie package on sale

Mint frosting:
1/2 stick butter
2 1/2 cup confectioners sugar
3 Tbsp milk
1/4 tsp peppermint extract
Green food coloring

Chocolate drizzle:
1/2 large package (3/4) cup) Semi-sweet chocolate chips
Pat of butter or touch of oil

Make brownies and cool about 1 hour.
Mix mint ingredients, creaming the butter and sugar first, then adding in milk as needed for consistency. You can add more or less as desired.
Melt chocolate drizzle ingredients on stove or microwave on 1/2 power, so not to scorch the chocolate.
When brownies are cool, spread with mint frosting and drizzle with chocolate.

Easy, easy, easy. My kids think I am a St. Pad day’s Day rock star, and I can’t believe how bad these are for them. Moderation people. Think of moderation, or else think of a different recipe!
