It’s that time again. Fridays are meatless around here, and maybe they are at your house too! Pizza is one of those standbys in our house that we know everyone will like. One likes only crust, the other only the pizza…if it’s whole. Another likes her’s with sauce to dip it in, and another only likes it cut into pieces. While it doesn’t look the same to each of us, we all enjoy it!
This is a delicious pizza- not at all like a regular pizza with sauce. The sweet potato adds a warmth to the crispy crust that is very comforting. But it’s the flavors of the crispy onions and blue cheese, that when combined with the peppery arugula… that makes this so great, that it just works.
Here’s the recipe:
Sweet Potato Pizza with Blue cheese, Crispy Onion, & Arugula
I love this meatless pizza, that is a welcome change from the traditional sauce and cheese variety!
- 1 pizza dough (your own recipe or store bought)
- 1 sweet potato
- 1 cup arugula
- 1 medium onion, sliced into half-rounds
- 2 Tbsp. olive oil
- 1/4 cup blue cheese
- 1/2 cup fresh or shredded mozzarella
- salt and pepper
Preheat the oven to 400*.
Microwave or roast your sweet potato until cooked.
Peel and Mash the potato with a fork until it's soft and spreadable.
In a medium skillet, add your oil. Heat to medium/low and add your sliced onions.
Cook the onions past caramelization, until they are crispy but not burnt. Set aside.
Roll out your dough into your sprayed sheet pan.
Sprinkle with salt and pepper.
Spread your sweet potato in a thin layer on the crust.
Spread the arugula in a layer on top of the potato.
Sprinkle the crispy onions on top of the arugula.
Sprinkle the blue cheese all over this layer.
Place the fresh mozzarella evenly around the pizza.
Bake on a lower (but not the lowest) shelf of your oven for 15-20 minutes until the edges are lightly browned.
Remove from oven and slice and serve!
