Game Day!

In these parts, you are either happy or sad about this fact.

I for one, am hap, hap, happy!

Game day eats are so fun! Little finger foods, chips & dips, spreads, and cheesy goodness seem to be a-plenty when you are watching a football game- but don’t forget the main course! There is the grill of course, loaded with chicken wings or burgers, but when it gets a little colder outside, I always love a nice pot of chili on the stove or crockpot that I can dip into for an easy weekend lunch or dinner that is a healthy and hearty meal among all the snacks.

chili

This chili is goooood. And easy to make besides being healthy.

Make these in a flash and last minute if you want- they are that easy!

chili ingredients

Onions, garlic, and jalapeño are the only things to chop- otherwise just add beans, broth, tomatoes, and spices and you’re in business:

In a non-stick pan, heat the oil until medium hot, but not smoking, and brown the beef until thoroughly cooked- season as desired with salt/pepper. Break up the pieces as they cook to make it really small pieces and broken up. Remove from heat, and add to the crockpot.

Layer in the rest of the ingredients in the crockpot except the beans. Cook on high for 4 hours or low for 6-8. Add beans the last hour of cooking with the masa harina. Stir and continue to cook until done.

Notes

Serve with corn chips, shredded cheese, chopped onions, hot-sauce, or any other yumminess that you love with chili.

I made this recipe in the crockpot so I could just set it and go about my day, but I use the exact recipe on the stove, just simmering it for a few hours to let the flavors build. It is great and a go-to for me in the fall. Hope you enjoy!
