Chocolate Beet Muffins #Choctoberfest

Welcome to my final day for #Choctoberfest! It has been so Chocolatey! So far this week, I have made:

…and today, I am bringing you these amazing Chocolate Beet Muffins!!

Chocolate Beet Muffins

I am a huge muffin fan, but I have also found that it’s a great way to hide things that are healthy and get them into my kids! These Chocolate Beet Muffins, are so good, no one even knows how good-for-them they really are! Chocolate is key here- pink muffins from the beets alone might fly, but I didn’t want to risk it, so I made them with the cocoa added and “red velvet” muffins were born! My very picky eater eats these as does my no-vegetable or fruit daughter! Granted, I haven’t owned up to the beets with her…but I still consider this a WIN!

My idea here for flavor combinations, is inspired by the Minimalist Baker’s vegan version, but the recipe here is all mine adapted from my very versatile AAA Muffin recipe! I love this recipe since it is so easy to adapt to just about any flavor combination and things that you love in your muffins. I used Rodelle brand cocoa too, which has some really great-for-you things about it:

Antioxidants
Dietary Fiber
Calcium
Vitamins like magnesium, potassium, and iron
Naturally cholesterol free
Kosher, gluten-free and non-GMO

Chocolate Beet Muffins

Honestly, the taste was very different than the regular dutch-process cocoa that I normally use- the color is richer, but Rodelle’s Gourmet Baking Cocoa contains one of the highest levels of cocoa butter on the market, which gives it a rich chocolate flavor. Let me break down this awesome recipe for Chocolate Beet Muffins for you:

Dry and Wet:

Mix in the beets- I seriously LOVE this color- no filter!!

Combine the two and add to the muffin tins- sprinkle a little more chocolate on top for good measure! Bake and Done!

I know you are going to love these and make them as much as I do- we have no shortage of chocolate here! So let’s get to it:

Chocolate Beet Muffins

Ingredients:

Dry 1st:
3 cups all purpose flour
4 tsp.baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1/2 cup brown sugar
1/2 cup white sugar

Wet 2nd:
1/4 cup applesauce
1/4 cup canola oil
1 cup low-fat milk
1/2 cup low-fat plain yogurt (greek or regular)
2 eggs
1 cup of beet puree (can add up to 1/2 cup more)*
1 tsp. vanilla extract

Mix-In
1/2 cup mini-chocolate chips

How to make them:

  • *First make the beet puree: Either roast 3 beets in their skins, by first washing them, rubbing with olive oil and tightly wrapping in foil. Roast in a 400* oven for one hour. Remove the foil and skin and discard. Puree the beets in a food processor or blender with 1/4 cup of water. **If you want to use canned beets, and skip roasting, that works to. You just drain the liquid before pureeing and then add 1/4 cup of water as you blend.
  • Prepare your muffin tin by lining with paper cups and additionally spraying the paper cups (this keeps them from sticking). Preheat the oven to 350*.
  • In a large bowl, mix the dry ingredients together and whisk to fully incorporate all the ingredients.
  • In a separate bowl, mix the wet ingredients using a whisk, and once combined, add this to the dry ingredients. Mix thoroughly.
  • Add the chocolate chips and scraping the sides of the bowl with a rubber spatula, spoon 1/4 cup of the mixture into the prepared muffin tin.
  • Bake at 350* for 20-25 minutes.

We are now officially IN #Chocotoberfest week, being that it’s Day-4…I can’t even. So many great recipes linked up all week, and so much creativity! Amazing. I thought I’d share with you all something amazing. Yep. Not so much my recipe- well, that IS good. But I have a trick that I know you will love. If you have kids, or picky eaters…

This is my super fun trick:

And you may feel free to pass this on! I used apples that I peeled…the trick from my friend, Julie, is to peel the apples and then submerge in pineapple juice. Coat them all over with the juice then add them to the platter: Absolutely no browning. This is my newest trick and I told her I’d steal it- and I did! It also adds a sweetness that I like without changing the taste of the apple. Now I make peeled apples in pineapple juice all the time for my kids lunches- WIN.

So after all that healthy apple eating, of course we have to dip them in chocolate. It just goes without saying for my chocolate addiction! Actually, I had to bring something to a friend’s house recently, and I only had apples and graham crackers…and the ingredients to make this easy and yummy dip. So I know you can make this with minimal ingredients and effort, and look like you are a mini-Martha ready for a Pinterest close-up. Well…let’s see.

Chocolate Cheesecake Dip

Ingredients:

1 package lower-fat cream cheese, softened to room temperature
1/4 cup brown sugar
1 cup powdered sugar (I used Imperial Sugar)
1/4 cup cocoa powder
2 TBSP. milk
1 tsp. vanilla
2 TBSP. cup mini chocolate chips

Here’s what you do:

  • In a large bowl, using an electric mixer, cream the cream cheese and sugars. Add cocoa powder, milk, and vanilla until smooth.
  • Using a rubber spatula, scrape into a bowl. Sprinkle with chips. refrigerate until ready to serve.
  • Serve with fruit like bananas, apples, strawberries and graham crackers or vanilla wafer cookies.

This is a party-pleaser. For picky kids and parents too, this can be an easy dish to make and bring somewhere or just to enjoy on a Saturday night! My pictures are kind of casual, since I did indeed “bring this” to a friend’s house. It is in a plastic container and paper plate- nothing I’d miss if it was left at her house.

This easy to make dip is the perfect "What should I bring?" to your next informal get-together!

Ingredients

Chocolate Lover’s Puppy Chow Snack Mix #Choctoberfest

My kids are gonna flip when they see what I made for them today! They freak out over this yummy snack mix- it is so easy and I change it up with the add-ins, like today for the Chocolate Lover’s version of this classic Puppy Chow Snack Mix- also known as Muddy Buddy Mix- though I call an ice cream thingy a muddy-buddy, so to me this is always Puppy Chow Mix!

Either way, I know you’ve had it, but maybe never made it. Let today be the day you decide to try this- it is so easy! Did I say that already? It is! Now…I have friends with kids that need gluten-fee or peanut-free- this is so adaptable to that!

For allergy substitutions, you can:

  • Substitute soy-nut, sunflower, or cookie butter for the peanut butter
  • Use peanut or dairy-free chocolate chips
  • Use the gluten-free cereal (most rice & corn are already, but certified gluten-free is available!)

See? You can have your Puppy Chow and eat it too! Joy!

Chocolate Lover's Puppy Chow Snack Mix

Chocolate Lover’s Puppy Chow Snack Mix

Adapted from the Chex website recipe

Ingredients

1 1/2 cups of powdered sugar (I use Imperial Powdered Sugar)
1/2 cup of baking cocoa
9 cups of any combination of rice, corn or wheat squares cereals (like Chex)
1 cup of semi-sweet chocolate chips
1/4 cup (4 TBSP.) of butter
1/2 cup of peanut butter (or other nut butter)
1 TBSP. pure vanilla extract
Optional toppers: candy coated chocolate candy (like M&M’s), chocolate sprinkles

One 2 gallon zip-top storage bag
parchment or wax paper

What you do:

  • Prepare a rimmed sheet pan, by lining with wax or parchment paper. Set aside.
    Prepare a zip-top storage bag. Unzip and add in the 1 1/2 cups of Imperial Powdered Sugar and your 1/2 cup of cocoa. Mix together and set aside.
  • In a small pan, on low heat, slowly melt the chocolate chips, butter, and peanut butter until smooth when stirred. Turn off the heat. Add the vanilla. Stir.
  • Using a rubber spatula, spoon the chocolate mixture over the cereal and stir until coated.
  • Spoon the mixture into the prepared storage bag and close.
  • Shake until totally coated.
  • Spread out on the prepared pan. Shake on the optional items: sprinkles and candy.
  • Let cool. Store in the refrigerator until ready to serve.

It’s kind of messy, but it comes together super easily!
