Greek Chicken Gyro Mini Meatballs with Tzatziki Sauce #SundaySupper

Greek Chicken Gyro meatballsMy new favorite appetizer. Yep. This one is a winner.

Tzatziki is a sauce made from yogurt, garlic, lemon, cucumber and spices. It can get changed up by leaving out the cucumber, like for my Cheese & Sprout samis- yum! Or you can add lots of lemon and use it for a salad dressing. This version is a basic one that you can work with as a dip and go from there- I am a huge fan of Tzatziki sauce in all variations, so finding some way to have it as an appetizer just makes sense.Greek Chicken Gyro meatballs

Gyros are such an awesome sandwich that converts well to an appetizer. The chicken just makes the traditional gyro that much healthier, and I prefer the taste. Adding in feta keeps them soft and adds a lot of flavor. I hope you try this- I know it’s a repeater in my house!

Greek Chicken Gyro Mini Meatballs with Tzatziki Sauce

For the Tzatziki Sauce:

Ingredients:

1 Tbsp. fresh mint, minced
1 tsp. dried dill
1/8 tsp. ground pepper
1/2 tsp. kosher salt
1 Tbsp. lemon juice
2 cloves of garlic, peeled and pressed (or minced)
1 small container full or 2% plain greek yogurt (8oz)
1/2 of a small cucumber, peeled, seeded and finely diced

Directions: Mix all in a bowl and refrigerate until ready to serve.

For the Greek Chicken Gyro Mini Meatballs:

Ingredients:

1 Tbsp. fresh mint, minced
1 tsp. oregano
1 tsp. garlic powder
1/2 tsp. kosher salt
1/3 cup bread crumbs
1 egg
2 ounces crumbled feta
2 Tbsp. minced onion
1 lb. of ground chicken

Directions:

  • Preheat the oven to 350*. Spray a rimmed cookie sheet.
  • In a large bowl, mix the dry ingredients first. Add the egg, feta, onion and chicken and mix thoroughly until combined. Form into tiny meatballs, 1-inch apart on the cookie sheet.
  • Bake in a 350* oven for 18-20 minutes until cooked through. Serve immediately or refrigerate and reheat before serving. Serve with fresh tomatoes and cucumber and the Tzatziki sauce on the side.

Ouzito: The Greek Mojito #SundaySupper

Mint, Strawberry, Ouzo, The Ouzito | Hardly A GoddessHave you been so excited to see the new movie that released this weekend, My Big Fat Greek Wedding? I have. I loved the first movie for so many reasons, not the least of which is the huge lineup of hysterical women comedians, the second of which is the storyline of a crazy and loving family, and the third, well. I just do. Isn’t that reason enough to like something? I just do.

Well, for the Sunday Supper lineup this week, we are themed out in all things Greek. Now, I always joke to my friends, that ethnically I am a mutt. A total mix of lots of different nationalities and cultures collide inside my body, sometimes will crazy results, but the best of which is the love of all food cultures and especially the food-centric ones! Problem is…I am not Greek. Not even a little bit. Oh well! I can still appreciate the food and the culture and here you have it: the drinks!Ouzo- for the Ouzito | Hardly A Goddess

So as I understand it, Ouzo is usually chilled and then served in little shot-type glasses after dinner to sip on. Or it can be served with a splash of club soda.  There are lots of other Ouzo drink ideas at the Visit Greece site, or on this Greek Reporter Newspaper, that explain that Ouzo “is more of an after food drink, rather than a drink to accompany your food.” It has an anise or black-licorice taste. You either love it or like it…and maybe even hate it (like my husband!), but if you like it even a little, you will certainly enjoy the Ouzito!

To make an Ouzo-Mojito, I made a mojito, but with Ouzo, and then added some strawberries, which tones down the licorice taste and makes it look really pretty and smell amazing: mint, strawberry, and licorice!  It doesn’t get much better!

So here you are:

Ingredients

  • 1 ounce simple syrup or 1 TBSP. sugar
  • 3 fresh strawberries cut into pieces
  • 5 fresh sprigs of mint
  • 1 ounce fresh lime juice
  • 2 ounces ouzo
  • 2 ounces club soda

Instructions

In a shaker, place the mint, strawberries and simple syrup. Muddle gently, but don’t rip the mint or it will get weirdly bitter.

Add ice, the lime juice, the ouzo and shake a few times.

Pour all of it (don’t strain) into a highball or taller rocks glass.

Top with club soda and garnish with a mint sprig or sliced strawberry.

This makes one strong drink or you can split it and add more club soda for a toned-down version!
