Ultimate Coffee Chat: May

Ultimate Coffee | Hardly A Goddess

I love this series. On the first Saturday of the month, I share my favorite little things about what’s been going on in my world. Too much!

If you and I were sharing a coffee, I’d tell you:
I made two awesome recipes this week so far this week: First, I made an excellent vegetarian crockpot dinner that only takes 2 hours on HIGH or 4-5 on low. It is a Weight Watcher’s recipe and I am sold. It is a go-to meatless meal, and I served it over sautéd kale and some dried red chili pepper sprinkled on top. Yes. Now you can make room for dessert! The second is less healthy, more weekend: Jalapeno Popper Pizza. Ri-dic-ulous! So good! I could make this as an appetizer or just eat the whole darn thing. The recipe is on the blog tomorrow, so stay tuned!

If you and I were sharing a coffee, I’d tell you:
We are in the midst of lots of sports, however, all the games and practices have been cancelling. It is RAINY! The good news is that the air smells so good because all the flowers are blooming! All the flowers! It is beautiful. My eyes haven’t stopped watering from the allergies, but it is pretty!

If you and I were sharing a coffee, I’d tell you:
I got new sneakers! Mr. HAG got them for me for Mother’s Day! I think he was sick of my excuses for not running lately! My old sneaks had seen some MILES! so I was due. I got the same Brooks Ravenna model that I had last Marathon, and it went well with the legs and knees, so I decided to just repeat the shoe-shopping of last year. Time saver. I had some ideas of going to another model, like Hoka or Nike again, but I was in a time-crunch, and these are pretty!

If you and I were sharing a coffee, I’d tell you:
My kids’ school is underfunded. By 3 million dollars or so. They are laying-off 80 people and taking away funding for all the good stuff that makes school fun: less crowded classrooms, music, sports, buses. They will make us pay out of pocket, and that is okay. But what about all the people in my very economically diverse city that can’t afford it? Is it sports and music for people with money? Not right. Seriously bad. I can’t get into it too much, but this is major for us, so I thought I would share. I know budgets are tight everywhere, so I reserve judgement. We shall see…

If you and I were sharing a coffee, I’d tell you:
This week was full of holiday fun, huh? Star Wars Day, Cinco de Mayo, and Mother’s Day tomorrow! So fun! My plan for tomorrow, since there are NO sports for the kids (happy dance!) is to sleep, eat, run, go to the movies, and play. I will be on the #SundaySupper chat at 7pm, but other than enjoying my kids and relaxing, I will be celebrating my Mom-hood. And calling my mom and mom-in-law too of course! I am so lucky to have these two amazing women who help me be a better mom~

If you and I were sharing a coffee, I’d tell you:
I wish all the moms, a happy day tomorrow, and giving all the daughters and sons a reminder to thank whoever raised you to be you… Whoever you call “Mother,”Happy Mother's Day | Hardly A GoddessHave a lovely day today and week ahead! Until next time…

Hope you enjoy your day tomorrow. It is not mother’s day here in France, so mother’s day in the US always sneaks up on me !
I always buy the same brand / model of sneaker… Brooks GTS. Switching brands has not helped past knee or hip problems, so I just stick with the familiar.

My heart breaks when I hear about the schools and lack of funding. I recall when we had to close our library at the elementary level one year. So so sad. I hope things get better and something is figured out. Sounds like you are having success with some weight watchers recipes. A great excuse for new running shoes always, because the old one’s have too many miles on them. 🙂 Happy Mother’s Day

One good thing about all the rain is it does tend to help with all the pollen! Thankfully down South the pollen is gone. I wear Ravenna’s too some. I have been eyeing the newest ones.
I enjoyed coffee with you and I hope you have a great Mother’s Day!

Oh, it’s been a while since I thought about that book! Such a sweet one. School budgets are always on the chopping block. Back in the day I was going to become a teacher but changed my mind during a budget crisis when I saw good friends who were excellent teachers stressing about their positions. I think there is too much emphasis on standardized tests that lets administrators think they can cut P.E. and arts. ~sigh~ Thanks for chatting over coffee!

Thanks for the comment, Coco- Just when I think it is “just us”- everyone is cutting their school budgets…People are short-sighted I think. But then, I also am not a teacher, so I think if I was, it would be even harder.

hahaha, I’m with you on the allergies, but the flowers are super pretty!

Yay for new sneakers! I just got myself a pair of hiking boots and I’m pretty excited about them! <3

I'm sorry to hear about your kids' school. :[[ It makes me really sad that arts + sports are always the first to go.

    Happy Mother's Day!
