Winter BLT Panzanella: AKA Bread Salad

Bread Salad PanzanellaJoin me today, as I share some amazing salads with the amazing cooks of #SundaySupper! Not only are these unique and great ideas for winter salads, but they are a great way to get those greens all month long and then into March too! This is pretty much a full meal plan for staying healthy throughout the rest of the cold winter! I made my own BLT Panzanella, which is a bread-salad that is made more delicious, the longer it sits in your fridge (READ: leftovers!), and this is just one of the 50+ recipes below!

I love BLTs: Bacon, Lettuce & Tomato sandwiches. My adult self knows that there is a better way to eat this for my everyday lunch than on white toast, but the combination of bacon and tomato….nothing better.  Bread salad is a great way to re-create this great combo by using up stale bread, making it into homemade croutons and then mixing it with the chunky cut-up vegetables and adding some smokey bacon.

To make it a bit more comforting for winter, I make the dressing on the stove to warm it all up before I pour it over the greens- kind of wilting them and softening the bread, making it better, the longer it sits. The key is the letting it sit. Anywhere from 2 hours to 24 will do the trick: De-lish!

Bread Salad Panzanella

A hearty salad witht the crusty bread, this Panzanella is a delicious combination of the light dressing with the smokey bacon.


    For the bread cubes
  • 2-3 cups crusty (Italian or French) bread cubed into bite-sized pieces
  • 2 Tbsp. olive oil (for drizzling)
  • 1/2 tsp. garlic powder
  • 1/2 tsp. salt
  • 1/2 tsp. basil
  • 1/4 tsp.ground black pepper
  • The Salad
  • 4 cups hearty greens (I used arugula)
  • 1 cup halved grape-tomatoes
  • 1 cup rough chopped seeded cucumber
  • 2 scallions chopped
  • 3 slices cooked bacon, chopped into small pieces
  • For the dressing
  • 2 Tbsp. olive oil
  • 1/2 a minced shallot
  • 3 Tbsp. red wine vinegar
  • 1 Tbsp. sugar
  • 1/4 tsp. dry mustard


For the bread cubes

Preheat oven to 275*. Spray or line a rimmed sheet pan with parchment. Lump your cubes in the center of the pan, and drizzle with the oil. Toss to coat all the pieces, and layer them flat in the pan. In a separate bowl, combine the herbs, and then sprinkle them over the cubes. Bake for 10 minutes until just dried out, not browned. Set aside to cool, while you do the rest.

Assemble the veggies

In a large bowl add: Greens, tomatoes, cucumber, scallions, bacon and cooled bread cubes.

Set this aside and make the dressing.

For the dressing

In a skillet, add the oil over medium heat until hot, and then add the shallots until translucent.

Add the vinegar, sugar, mustard.

Whisk until the sugar is dissolved.

Pour over the salad, and toss completely.

Cover and let sit for atleast 2 hours. Serve!


*Note: Do not overbake these cubes into just want to dry them out, not brown them. **If your bread is already stale, you can skip baking them, and just season them a bit with the herbs for flavor.
