Kipplens AKA: Pecan Snow Balls #ChristmasCookies

I am a fan of all things cookie-eating too, LOL, so this is one of my favorite weeks of the year! I am sharing my newest recipe with you today, Pecan Snowballs, and it’s a keeper.

Millican Pecans for Pecan Snowball cookies

I have always loved these cookies when I’ve had them from a cookie exchange- If I had known how easy they are to make, I would have made them long ago myself. They are lightly sweet and perfect with your cup of tea or coffee in the morning.

Recipe for Kippens Also Known as Pecan Snow Balls

Ingredients:

  • 2 cups softened butter
  • 1 cup white sugar
  • 1 Tbsp. vanilla extract (I used Adams Extract)
  • 1/2 tsp. kosher salt
  • 5 cups all purpose flour
  • 2 cups pecans, chopped fine (I used Millican Pecans)
  • Reserved: 3 cups of sugar

Here’s What You Do:

Preheat your oven to 325*. Prepare a baking sheet with non-stick spray or line with parchment. Set aside.
In a stand mixer, add the softened butter and sugar and mix until creamy and light colored. Add the vanilla, salt, flour, and pecans. Mix until just combined. Scoop out one inch balls and roll in your palms to a ball (a melon baller or cookie scoop is helpful to keep them uniform). Place on your prepared sheet about an inch apart.
Bake for 17-20 minutes, until lightly browned on the bottom. Remove to a wire rack to cool. Roll in the reserved confectioner’s sugar (I add the sugar to a large ziplock and shake a few cookies at a time, gently) and remove to the rack.

This recipe makes 12 dozen cookies. Your cookie exchange says thank you.
They can be frozen for up to 3 weeks, and thawed before enjoying, if you can bear to keep away from them that long!

Adams traces its beginnings back to Battle Creek, Michigan, when John A. Adams began making and selling his Green Plant Sarsaparilla extract, Adamur, in 1888. In 1905, he moved his family to Beeville, TX. At the time, most vanilla sold to pharmacies and was often labeled “Do not bake or freeze.” John A. Adams’ wife yearned for a flavoring that wouldn’t bake or freeze out. He announced that he could produce a better vanilla than the one his wife was currently using. Working with just $6.71 worth of materials on top of an old icebox, John A. Adams discovered the formula he wanted. To test this product, his wife whipped up a cake for the family to try. “John, this is the BEST flavoring I have ever used,” she announced. “Well, that’s old man Adams BEST,” he responded.
