Since yesterday’s cookie was a bit lengthy in process, I wanted to give you an easy, 3-ingredient, no-bake option for your cookie tray making this year!

No Bake Chocolate & Marshmallow Stained Glass Cookies

I love no-bake cookies and my family favorite is the classic Haystack Cookies. Have you tried these? They are a hit! I like to make rice-crispy style cookie bars too, but you have to doll them up a bit to make them festive enough for a cookie tray. But not these pretty little cookies. The colorful marshmallows make for a pretty mixture that kids and adults are sure to be drawn to. If you like marshmallows, you will really enjoy this no-bake option. 

No Bake Chocolate & Marshmallow Stained Glass Cookies

3-Ingredient No-Bake Chocolate & Marshmallow Stained Glass Cookies

Ingredients

  • 2 cups chocolate chips
  • 1 stick butter
  • 1, 11 ounce bag of colorful marshmallows

Here’s What You Do:

In a large glass bowl, heat the chocolate chips and butter in your microwave (wattages vary, so consult your manual if you need to). 

  • 45 seconds, at 50% power.
  • Stir
  • another 45 seconds, at 50% power.
  • Stir
  • heat for the last 30 seconds, at 50% power.
  • Fully stir and add in the marshmallows

Drop the mixture onto a large piece of waxed paper, and roll into a tube. You can shape it, once it’s rolled up, to be about  1 1/2 inches around. Refrigerate for 3 hours. Cut into 1/4 inch slices. Enjoy.

**Variation: Add regular mini-marshmallows that aren’t colored, add some nuts, and call it something else. Still yummy.

I had to tell someone how to make this today, and honestly- this is the easiest cookie treat to make!
