One Easy Roast Chicken: Four Meals #SundaySupper

Welcome to Sunday Supper, my friends. I told you that I was flat out this week, and I wasn’t kidding. I made not one, but two whole chickens this week, and I can’t sing the praises of just how great it was for my meals this week: Just one easy roast chicken can make a few days of meal-prepping for you, so the two that I did….I am sitting pretty with meals this week! This picture ain’t pretty friends- but it sure is good!

Here’s the Recipe for an Easy Herb Roast Chicken:

  • First, move the rack in the oven to the lower rack.
  • Oil the chicken.
  • Make your seasoning. Season the top, bottom, and inside of the chicken.

Herb Seasoning for Roasted Chicken

  • Prep the roasting pan, by placing whole, prepped carrots, celery and onion on the bottom of a sprayed pan.

  • Place the chicken breast side down for the first part of the roasting and flip it half-way through to finish roasting.
  • When it’s done cooking, remove and let it rest. Slice and serve with your favorite sides.

Roasting a whole chicken is so easy. Don't be fearful - once you remove it from the packaging, you are half-way there!

Ingredients
  

  • 1 whole chicken I use a 6-7 pound roasting chicken
  • 1 Tbsp. olive oil
  • 1 tsp. garlic powder
  • 1 tsp. onion powder
  • 1 tsp. paprika
  • 1 tsp. oregano
  • 1 tsp.ground black pepper
  • 1 tsp. kosher salt
  • 3 carrots peeled and stemmed
  • 3 celery sticks washed
  • 2 onions.peeled and chopped in half
  • 1 cup water

Instructions
 

  • Preheat your oven to 350*

Prep your pan: place your carrots, celery and onion in the bottom of a sprayed 9X12" pan.

    Make your herb seasoning: In a small bowl, mix the garlic, onion, paprika, oregano, pepper and salt.

      Prep the chicken:

      • Take it out of the wrapper and dab all over with a paper towel. Pull the neck bone from the center cavity of the chicken and discard (some may keep, but I throw this out).
      • Sprinkle the chicken with the herb seasoning all over: top, bottom, and inside the cavity too.
      • Place the chicken, breast side down on top of the vegetables in the pan. Add 1 cup of water to the pan and place in the oven.
      • Cook for one hour.
      • Remove from the oven and flip the bird over, so the breast is up. Turn the heat of the oven up to 375* and continue to roast for another 1 hour and 30 minutes. Test for done with a thermometer to 165*. If the chicken leg is wiggly that is a good sign too.
      • Remove from the oven and let it sit for 15 minutes. Slice and serve with your favorite sides. Scoop the juice from the bottom as your gravy.

      Notes

      If your chicken is getting too brown as it cooks, tent some foil to cover the top as it cooks.

      Seriously my friends. I love roasting a chicken. It is economical and saves me from cooking chicken all week!  The only better thing, is when I take my double-wide crock pot and put the chicken or chicken(s) in there and don’t even touch it! Using the leftovers makes a non-meal planner very happy to make dinner easily and in a pinch.

      If I don’t have time to roast a chicken or didn’t plan ahead to crock-pot it, I of course love the already roasted chickens at the store…but they are small, and you never get the juice and gravy that you get from roasting. You also control the salt and seasonings if you do it yourself which is always ideal. If you can, buy a big chicken, and you will have lots of fun making all these great leftover ideas for the week and then have some leftovers for a simple chicken sandwich!
