Red and White Pinwheel Cookies

This is my final contribution for #ChristmasCookiesWeek! It is my third and newest recipe- not super exciting as a sugar cookie, but look how cute just adding a bit of color and sprinkle make these?!

This is such a pretty cookie isn’t it? I have made pinwheels before for Hanukkah that were blue and white rounds, with a tube of sugar cookie dough! No judgement! They were adorable and delish by the way~ This time around I am making a homemade powdered-sugar cookie made with butter AND cream cheese and coloring it with a bright red, and finally sprinkling with my Sprinkle Pop sprinkles- aren’t these adorable?!

Here’s what you need:

  • 2 1/2 cups all purpose flour
  • 1 1/4 cups POWDERED sugar (confectioners)
  • 1 tsp. kosher salt
  • 1 tsp. cream of tartar
  • 1/8 tsp. baking powder
  • 4 ounces softened butter (or margarine)
  • 4 ounces softened cream cheese
  • 1 whole egg
  • *red food coloring
  • Sprinkles (I used Sprinkle Pop Fahoo-Fores Mix)

In a medium bowl mix the dry ingredients together with a whisk: flour, powdered sugar, salt, cream of tartar, and baking powder. Set aside.

In a stand mixer (I totally recommend this, as it’s a really thick dough and hard to work with a spoon or beaters) cream your butter and cream cheese until smooth. Add the egg. Slowly add in the dry mixture until combined. It will be clunky and very thick.

Remove the dough, and split in half. Set aside one half. Put the other, back into the mixer bowl, and add the red food coloring. I added a lot to get the red color- about 1 Tbsp., but it will depend on your preference of color. Mix in the stand mixer until totally combined.

Roll each dough section between 2 pieces of waxed paper until they are sort-of the same size and shape. Remove the paper from one, and lay it on on top of the other. Roll it up tightly, using the waxed paper to help you. Empty the sprinkles onto a flat plate. Roll the entire whole roll in the sprinkles, covering the outer layer completely. Roll back up in waxed paper.

Chill for at least one hour.

Cut into slices and roll in the sprinkles. Place 2 inches apart on your prepared sheet.

Bake at 350* for 15-20 minutes until they are lightly browned on the edges. Remove to a rack to cool.

This is such a festive cookie. Change up the color depending on the occasion, or use pre-made cookie dough to make it extra easy!

  • Preheat the oven to 350*. Spray or line a cookie pan with parchment (or silpat). Set aside.

Notes

I recommend a stand mixer for this one- the dough is super thick and hard on a hand mixer. If you must, you can mix my hand, and then your workout is done for the day (haha!).
